French Dip Sandwiches in my Crockpot

September 10, 2012 by Julie 2 Comments

The last week or two I have really gotten into crockpot meals. A lot easier than making a big meal each night. I also like that I can’t talk myself out of cooking when most of the meal is already almost done in the crockpot. I am also back to meal planning. The night before my shopping day I plan to sit down and find yummy recipes I want to make in the next week. Most of these will come from Pinterest or just by Googling what I want to make.  I know that meal planning makes life so much easier and I have been out of the routine of it for too long.

I love to eat out but we really can’t afford to do it more than once a week.  Meal planning will help with that too.

I Googled, “Easy Crockpot recipes” to find some simple ones. I need simple, at least right now. I have found a lot of yummy ones but they usually have too many ingredients for me. I am looking for recipes with 3-5 ingredients max.

On Saturday I made yummy french dip sandwiches. I added some french fries and it became a yummy meal for us.

Here is the recipe from About.com by Linda Larsen.

Prep Time: 10 minutes

Cook Time: 10 hours

Total Time: 10 hours, 10 minutes

Ingredients:

  • 2 lb. fresh beef brisket
  • 1 pkg. dry onion soup mix
  • 10-oz. can condensed beef broth

Preparation:

Combine all ingredients in 3-4 quart slow cooker. Cover crockpot and cook on low for 8-10 hours until beef is tender. Skim any fat from liquid in crockpot. Remove beef and cut across grain into thin slices. Serve on crusty baguette rolls and serve with the hot broth for dipping. 8 sandwiches.

See? Super easy and super yummy!

Tonight I am making Lemon chicken with rice and veggies 🙂

What have you been cooking lately?

This sounds so easy and delicious. Especially with the weather cooling off!
